In this workshop from the 2013 ACORN Conference in Moncton, Diane Savoie used local, organic, whole foods to create delicious appetizers for the audience to enjoy. She illustrated the importance of cooking with little to no waste, by using food scraps for making stocks. Preserving the Harvest: Intro to Lacto-Fermentation

Having both grown up in the city, Bryan Dyck and Shannon Jones of BroadFork Farm came to realize that their vision of farming included a desire to homestead. Their favorite way to preserve their harvests is through lacto-fermentation. At the 2016 Homesteading Symposium in Dieppe, they presented 3 styles of lacto-fermented vegetables: kimchi, sauerkraut and pickle.

Processing On-Farm and Off-Farm

In this presentation from the 2013 ACORN Conference in Moncton, Guylaine Buecheli, who farms in Quebec, discusses her and her partner’s farm and how it has grown to meet consumer demands. The couple raise pigs, cattle, and do their own processing at a butcher they co-own. More recently they’ve begun to cure and dry their own deli styled meats. Guylaine talks about the challenges they’ve faced as they expanded their business.

Promote to Build Your Farm Business

During this session at the 2013 ACORN Conference in Moncton, Roger Snowdon used examples from the audience to illustrate the point that every farm business has stories that can be sold and promoted to the media. It is wise to identify these stories, so that you can be proactive about using the media to expand the public profile of your farm business. Rodger also provided examples of how businesses have sold their success stories to the media, and also gave examples of how to do “damage control” through the media in the case of bad news stories.

Protected Structures for Sustainable Raspberry Production

In this session from the 2013 ACORN Conference in Moncton, Jean-Pierre Prive discussed season extension techniques using various protected structures including high and low tunnels, row covers and rain covers, as well as cultural practices and cultivar selection for raspberries. He compared the Maritimes to BC, which traditionally produces an abundance of this crop. Through his talk he frequently reminded the audience to cultivate the scientific mindset and to always experiment, test, and adjust growing techniques and practices, as well as varieties selected.

Raymond Loo on Transitioning to Organic

Raymond Loo on Transitioning to Organic

Raymond Loo, featured in this short video clip, passed away in 2013 after having built a reputation as one of the most captivating organic farmers in Canada, with a vision for farming in PEI like no other.


Raymond's family has farmed Springwillow Farms since the early 1800's. His father came from Holland and after marrying, farmed and operated a custom spray business--fully embracing the "Green Revolution". Not until late in his life, did Mr. Gerrit Loo become an important organic leader for Atlantic Canada, inspiring three of his children to become certified organic farmers in PEI too. ACORN has also named its annual organic award for Gerrit Loo (http://www.acornorganic.org/gerritloo...). An interesting story, as told by Raymond, and one to inspire those who think chemical agriculture could never "go organic". (60 secs)
